If you ask us from Salento what the word “OLIO” (oil) evokes in us it is a bit like asking us to talk about ourselves, our youth and all the images, memories, and sensations, and flavors which have and will accompany our life.
Forests of millenary olive trees, men and women clinging to the trees busy picking down to the last olive, arriving at the mill, the first tasting on a slice of warm bread, a smile and then the celebration: a year of work has yielded its fruits.
All of this is still happening in our family out of respect for our forefathers and our mother land: the Salento, last strip of land at the south of Puglia.
It is Salento, the choice location for the growth of olive trees, that sees the birth of the Azienda Agricola Case Bianche, 30 hectares of olive groves, most of which are centuries old and composed by two varieties: Cellina ad Ogliarola.
